Banana bread is a classic, comfort food, a healthy alternative to regular bread. Thinking of what to do with your overripe bananas? This easy recipe will put it to good use and you don’t have to be a professional baker to make this, just follow the easy steps to get started.
INGREDIENTS:
3 ripe bananas, mashed
1/3 cup (80 ml) melted butter
1/2 cup (100 g) sugar (can be reduced for less sweetness)
1 large egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
Pinch of salt
1 1/2 cups (180 g) all-purpose flour
1/2 cup chopped nuts (cashews, peanuts, or your favourite nuts)
Optional Add-ins:
1/4 cup chocolate chips
1/4 cup dried fruit/ grated coconut (raisins or cranberries)
Instructions:
Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 4×8-inch loaf pan or line it with parchment paper. (You can also bake in cupcake tins)
Mix Wet Ingredients: In a large mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas.
Combine with Sugar and Egg: Mix in the sugar, beaten egg, and vanilla extract.
Add Baking Soda and Salt: Sprinkle the baking soda and salt over the mixture and stir to combine.
Add Flour and Nuts: Gradually add the flour, and mix till you have a good consistency. Fold in the chopped nuts (and any optional add-ins if using).
Pour into Pan: Pour the batter into the prepared loaf pan and spread it out evenly.
Bake: Bake for 60 minutes or until a toothpick inserted into the centre of the bread comes out clean.
Cool: Remove from oven and let cool in the pan for about 10 minutes. Transfer the loaf to a wire rack to cool completely before slicing.
Serve: Slice and enjoy your nutty banana bread!
Tips:
For extra flavour, toast the nuts lightly before adding them to the batter.
If you prefer, you can use whole wheat flour for a healthier twist.
This bread freezes well. Wrap tightly in plastic wrap and store in an airtight container or bag for up to 3 months.
